Over-used Recipe Swap 2010

Welcome to over-used recipe week on Simply Modern Mom. This week we are swapping over-used recipes from you, famous bloggers and one from me. Go to the Over-used Recipes category and see all their recipes with photos. If you missed the week of the recipe swap but would still like to participate, you can leave your links or recipes in the comments!

What is an over-used recipe?

A family staple. Some may call it comfort food. It’s that recipe you use over and over again that you have it memorized. It could also be that recipe that reminds you of home.

The goal

At least 365 over-used recipes contributed from everyone. Enough recipes to cover your taste buds for a year.

How you can participate?

  • Post your over-used recipe on your blog then link it below in the linky party. If your over-used recipe is already on your blog in a past post then link that.
  • If you don’t have a blog or your blog is private, you can leave the recipe in a comment below.
  • Please, keep all your recipes on this post so we can find all the recipes in one place.
  • And finally, tell your friends and family about the recipe swap so we can reach our goal of 365 recipes by Sunday.

Please remember…

  • Put the direct link to the actual post of the recipe. Don’t just link it to the home page of your blog. I will delete those.
  • Please take the time to double check your typing. Don’t want someone to try your recipe and accidentally use a tablespoon instead of a teaspoon.
  • My lovely international readers. I always have you in mind. Sorry most recipes will be in wacky U.S. measurements. You are welcomed to post your recipes in metric measurements. We can all convert measurements using an online conversion calculator.

    Ahh I forgot about this over the weekend when I was scheduling posts, but I’ve got a post still to do for tomorrow so I’ll plan that in this evening.

    I notice you’re using Simply linked – I’ve not tried that have you used it before – do you recommend it? I’m using Mcklinky at the moment – although I’ve not had any links yet and it’s ok but a bit intrusive.

    Black Bean Chili

    1 lb ground turkey or beef
    1 onion, chopped
    1-2 cloves, garlic
    2 cans black beans, drained and rinsed
    2 cans petite diced (or crushed) tomatoes
    1 tbsp chili powder
    1-2 tsp cumin
    1 tsp sugar
    <1 tsp garlic salt

    Brown meat with onions and garlic. Add remaining ingredients and simmer. Serve with cheddar cheese.

    African Peanut Soup

    2 medium onions, chopped
    2 lg. red or green peppers chopped
    2 T. olive oil
    4 cloves garlic, mashed
    1 (29-oz) can diced tomatoes
    8c. chicken broth
    1/4 tsp. pepper
    1/4 tsp. crushed hot red peppers (adjust to taste)
    1 c. cooked rice
    1 1/2 c. cooked chicken, chopped
    2/3 c. peanut butter (I prefer chunky)

    In a large pot, saute onions, peppers and garlic in oil. Add tomatoes, broth, pepper and hot peppers and simmer over low heat for 1 hour. Add rice and chicken and simmer 15 minutes. Add peanut butter and mix. Bring back to simmer and serve.

    Sticky Chicken

    1 large package drumsticks- or how ever many chicken breasts or thighs (the more chicken used the stickier the chicken, less chicken more sauce, which is how my kids like it)
    1 packages onion soup mix
    1 large bottle of Russian Dressing

    Wash chicken, pat dry, put in large baking pan, mix soup and dressing together and pour over chicken. Bake 1-1 1/2 hours on 350.
    We serve this over rice. This is supper yummy and easy peasey!

    This can also be made with the little bottle of dressing, put dressing and soup in a ziplock bag with wings and shake to coat, bake and it is super yummy, super sticky chicken wings!

      of course, krystal! in that text box, you highlight the whole thing (you’ll have to scroll down for some of the text) then copy (control+C). Then in your blog where you write text, go to the HTML tab and paste (control+V) the code wherever you want the button to go. Then you can go back to the compose tab to see what it looks like. Let me know if you need more help.

    Thanksgiving Strombolis:

    Preheat oven to 375 Farenheit
    1/2 lb to 1 lb turkey leftovers (or deli turkey or cooked ground turkey)
    1 can cranberry sauce (with whole berries or without)
    8 oz. shredded cheese (mozzarella, cheddar, or provolone)
    2 diced carrots
    optional – 1/4 cup chopped cabbage or other ‘green’ (spinach, greens)
    dash salt
    dash pepper
    dash tarragon
    1 lb bread dough (Homemade* or ready-made pizza dough from the refrig. section)

    Combine all ingredients above except dough

    Flour your hands a bit
    Spray a cookie sheet with olive oil
    Split the dough into 4-6 balls;
    Stretch out the dough ball into a small pizza shape
    Fill in the centerwith approx 1 cup of the filling
    Pull up the edges and pinch together to make a half-moon or stromboli shape
    Bake for 18-20 minutes at 375 until the dough sounds “hollow” when tapped and lightly brown
    Serve with extra cranberry sauce and a green salad or carrot sticks

    Homemade Chicken Fingers:

    Boneless Chicken Breasts
    2 eggs beaten with salt/pepper seasoning to taste
    Italian Bread Crumbs

    Cut chicken breasts into strips
    Dip into beaten eggs
    Roll/Coat with Bread Crumbs

    Bake in a 400 degree oven for approx 20-30 minutes

    These are great in salad, with fries, or even in a flour wrap with lettuce & tomatoe, ranch dress & cheese!!

    this is a very easy recipe but very tasty and uses ingredients that I am very partial to. It uses boneless, skinless chicken breasts (1 for each member of your family), 250g of streaky bacon for each of 3 chicken breasts, 1 large onion for each of 3 breasts, 1x 450g of cream of chicken condensed soup for each of 3 breasts. Basically, you peel the onion, cut them in half, and then in rings, Saute in a little oil until soft, but not coloured. Add the bacon, which has been cut into small pieces, and continue frying for about 5 minutes. Then add your chicken, which has been cubed.Continue to fry until the outside of the chicken pieces are no longer pink. Now add your cream of chicken soup, and simmer gently until chicken is cooked through. With the saltiness of the bacon and the seasonings, you don’t really need any further seasoning. Serve with rice or noodles. You can have supper on the table within an hour, including preparation time.

    Layered Summer Vegetables:
    3 medium zucchini, sliced lengthwise or horizontally
    Coarse salt
    Freshly ground pepper
    Oregano, fresh or dried to taste
    3 medium vine ripened tomatoes, sliced
    2 large sweet onions, sliced
    3 cups (12 ounces) mozzarella cheese, grated
    14 slices bacon, cut in half

    Preheat the oven to 350 degrees
    In an oiled baking dish, cover bottom with slices of zucchini. Sprinkle with salt, pepper and oregano.
    Arrange tomato slices on top and cover completely. Lightly sprinkle with salt, pepper and oregano.
    Next, add the sliced onions and sprinkle with grated mozzarella cheese.
    Put strips of bacon over all.
    Bake 45 minutes to 1 hour.
    Very easy and yummy for bbq’s or potlucks!

    Tomato Onion Soup with Mushroom Grilled Cheese Sandwiches

    6 cups (about 2 or 3 large) onions, sliced or chopped in bite-size pieces
    1/2 cup melted butter & olive oil mixed equally
    2-14oz cans diced tomatoes (the ones with added herbs & garlic are good)
    3-10.5oz cans strong beef broth (lower sodium is best)
    1/2 teaspoon each basil, pepper & oregano (or to taste)
    Chopped garlic to taste (optional)

    In a large stock pot, saute the onions in the butter until lightly browned/translucent. Add all other ingredients and simmer over med-low heat for 45 minutes to an hour.

    About 15-20 minutes before soup is done, saute 1 container of baby bella mushrooms in some olive oil & butter, until good & browned. Spray butter flavored Pam (or spread butter or margarine) generously onto one side of 8 slices of your favorite bread (the more rustic & crusty the better). Lay 4 of them butter side down on a cookie sheet. Add your favorite cheeses on top (I like a Swiss & White American combo)& spoon on some of the mushrooms, then add more cheese. Top with the other 4 slices of bread, butter side up. Broil in oven until browned, watching them very closely so they don’t burn, and flipping them over when the top gets lightly browned.

    Really yummy together!!

    1/4 cup chopped onion
    4 Tablespoons sugar (half white; half brown)
    1/2 cup catsup (usually we use more)
    1/8 teaspoon pepper
    3 Tablespoons vinegar (cider vinegar is preferred)
    1 teaspoon Worcester sauce
    1 pound ground beef, browned and drained

    Cook onion in oil. Add the rest of the ingredients except the ground beef. Bring the sauce to a simmer and cook gently for at least five minutes. Add the drained ground beef and continue to cook gently.

    This recipe is easy to double, triple, etc for more ground beef. The sauce can also be used for the base for baked beans or for any other meat. For convenience the barbeques can be made ahead and heated in a crock-pot for large groups.

    For 6 pounds of burger use:
    2 -1/4 cup chopped onion
    2 -1/4 cup sugar
    1- 1/8 teaspoon pepper
    2- 1/4 cup catsup
    1-1/2 cup cider vinegar
    3 Tablespoons Worcester sauce

    I have a recipe, but my blog is private, so here you go:

    Chicken Pot Pie Stew
    LaRue Workman (she can’t remember where she got it from, but chances are she made it up – she’s that amazing)

    3/4 lb carrots, sliced into coins
    1/2 lb sliced celery
    1/2 lb sliced mushrooms
    1/2 lb pearl onions
    2 1/2 teaspoons dried thyme
    1/4 C olive oil
    1 Tab minced garlic
    1/2 C flour
    4 – 5 C chicken broth
    1/2 teaspoon white pepper
    1/2 teaspoon black pepper
    4 C fat free half and half
    1/2 C parsley
    1/4 C peas and/or corn
    salt to taste
    optional: precooked and shredded chicken

    Saute the carrots, celery, mushrooms, pearl onions, and thyme. Remove from pot.
    Heat the oil, adding the garlic. After a couple minutes add the flour, stirring with a whisk. Cook a couple minutes stirring constantly.
    Add chicken broth and whisk till smooth. Add peppers and simmer for 5 minutes or until thick. (about the consistency of gravy)
    Stir in half and half, parsley and peas, then add remaining ingredients and reserved veggies. Simmer for 5 more minutes being careful to heat through but not boil.

    Note: Substitutions and rearranging ingredients works fine. I frequently use corn instead of peas and a whole pound of mushrooms but no celery…also, whole milk or even 2% can be used in place of the half ‘n half. It also doesn’t need to have chicken, but we highly recommend it.

    When the lemons literally drop off my tree this Old Fashioned lemon cordial is a favourite drink in our house hold-especially in the hotter months. It makes a nice gift in a fancy bottle.
    6 lemons, 4 cups of sugar, 1 tablespoon (20g) citric acid, 2 teaspoons Epsom salts, 900ml boiling water. Grate the rind from 3 lemons, juice 6 lemons. Strain juice and add all ingredients.Stir until dissolved then allow to cool to become cold before bottling. To serve: 1 to 2 tablespoons per glass topped with chilled water, soda or lemonade.
