Swedish Pancakes from Amy of Mod Podge Rocks

My great-grandfather was Norwegian – straight off the boat! My mom’s side of the family has Norwegian pride, and many a Scandahoovian joke is thrown around at family functions. We not only love the Scandanavian culture, but the deserts – no one can do heavy cream like a Norwegian! This recipe for Swedish pancakes is actually from my great-grandfather, and I can tell you that it’s loved by everyone in family including myself and my four brothers. There is nothing better than waking up on the morning of my birthday and my mom has made me a Swedish pancake breakfast. It’s all I ask for on my big day!

Ingredients:
4 eggs
2 cups milk
4 tablespoon butter, melted
2 tablespoon sugar
1 1/2 cup flour
1 1/2 teaspoon baking powder

  1. Beat eggs until thick.
  2. Add milk to the eggs.
  3. Add melted butter to the milk and egg mixture.
  4. Add sugar and stir until dissolved.
  5. In a separate bowl, mix flour and baking powder.
  6. Adding one third at a time, add the flour mixture to the egg mixture. Stir but do not beat. Batter will be lumpy.
  7. Heat a griddle to medium high. Using approximately 1/8 cup of batter, pour into a thin circle on griddle. When top of pancake has lots of “holes” and turns from shiny to flat looking, turn it over for about 30 seconds.
  8. As you remove the pancake from the griddle, roll it into a tube.
  9. Eat with syrup, jam, fruit, lemon and powdered sugar or whatever you like — not sardines though. Sardines suck.

    My mom made these and we put cinnamon and sugar in them then rolled them up… I LOVE LOVE LOVE these!!!!! I am craving them now LOL might have to make a batch to munch on tomorrow…. they are so great, ty for posting an old fav, brings back some good memories.. now if only i could get hubbie to love them. :-\

    Squeezing lemon and sugar on them before you roll then up is lovely, but you can put anything inside them. My mother used to make them and fill them with creamed chicken, rather like a wrap. Really delicious.

    omg yum!!! Im Swedish Hungarian and those rock!!! Sooo yummy
    LOL yes….sardines suck
    so does okra, liver, big waxy macadamia nuts and anchovies..oh yeah and anything with tentacles * shudder *

    My dad used to make Swedish pancakes and they were the best! I always put powdered sugar and lemon on mine, and everyone told me that I was weird. So glad that I’m not the only one who thinks that’s an awesome combination!

    This is technically not quite authentic Swedish pancakes though. The ones we make in Sweden don’t have any baking power or baking soda in them! It’s only flour, eggs, milk, salt and optionally melted butter. I was born and raised in Sweden and I’ve never seen or heard of anybody using baking powder, could be Norwegian thing though!

    I make these too except I use a cup of mineral water and only one cup of milk and no baking powder. If you leave out the sugar you can fill them with savory filling e.g mushrooms, bacon with a cheese sauce……anything you fancy . Makes a great lunch with a side salad.
