While we are all getting ready for Valentine’s Day, I don’t want you to forget about Chinese New Year. It falls on Valentine’s Day this year. Chinese New Year is a big deal in my family. My mom is from Taiwan. I was born in Taiwan. We still have all of my mom’s side of the family living in Taiwan.
Also, my little Elle is turning 1 later this week. I decided to have a little Chinese birthday party for her this Friday with a few family members. We have several major events happening this year and I want to pace myself with all the party planning that I will do or help with this year.
As part of the birthday meal, I will be making this simple fried rice dish.
Ingredients:
Cook rice according to box or rice cooker directions. Set aside. Scramble the eggs and cook over stove top, breaking apart the scrambled eggs while cooking. Set aside. Heat the oil in a wok on medium heat for a few minutes. Toss in the onions/scallions allowing it to cook for a few minutes. Toss in the chicken and frozen vegetables. Cook heating the vegetables thoroughly, frequently stirring. Once heated, toss in the cooked rice. Mixing it well with the vegetables all ready in the wok. Fold in the eggs. Break apart the bouillon cube with fingers and sprinkle over the all the ingredients cooking in the wok. Also salt and pepper to taste. Mix it well.
Will you be celebrating Chinese New Year?

Look what came in the mail for me. At first I was giddy that I was getting almond in the mail. I have to admit. I was disappointed when I opened the tin and it was empty. But the cute little note and the fun tin design made me happy again. Now I just need some almonds to fill the tin. It fits the perfect serving size of 23 almonds in that beautiful tin. Great for tossing a little snack in my purse. Next to all of my kids’ snacks.
I am showing and telling (well, there’s not much to tell) all about my apron from earlier this week. It’s over at Amy Lou Who. Thought you might wanna know.
And yours truly was featured on V and Co. this week for my bandana skirts that I made eons ago. You know, the one that Kaye wouldn’t take off because she said it looked like Belle’s dress from Beauty and the Beast. I had to hide that thing now that it’s too cold and much too short for her to wear.
It’s a fabulous Friday all right. I also scored 11 pairs of shoes for myself and my girls today over at Payless. I know, I went overboard. But you’re talking to a shoe girl here. I warned Nathan that he shouldn’t let me go into ANY shoe store alone, even if it is Payless. He didn’t listen. So I bought one of everything. Only because I had a 50 percent off everything in the store coupon. I tried to remember the last time I bought shoes from Payless… it was middle school.
Happy Halloween!
I have a soft place in my heart for trees. I don’t know what it is about them that I love so much, especially since I’m not the kind of person that can grow anything green. But I love landscape and I love trees. Digital Photography School had a post last week, “21 impressive tree images.” All so lovely.
